How to Cook the World's Best Beef

Cooking Wagyu beef is a true luxury, and this approach will ensure you bring out all the delicate, buttery flavours that make Wagyu so special. Each step will help you achieve a tender, melt-in-your-mouth experience that’s irresistibly aromatic. Here’s how to do it:

Ingredients

  • 500g of Wagyu rib beef (about 2-inch thick)
  • A few sprigs of fresh rosemary
  • Himalayan pink salt
  • Freshly ground white pepper of Penja (or any high-quality pepper)
  • 2-3 tablespoons unsalted butter
  • 2 cloves garlic, smashed (leave the skin on for a rustic aroma)

Step 1: Sear the Wagyu

Start by preheating your oven to 220°C (428°F). While the oven heats, season your Wagyu rib generously with Himalayan pink salt and Penja's pepper. In a large skillet over high heat, add a drizzle of olive oil, a sprig of fresh rosemary, and a smashed clove of garlic. Once the oil is hot, place the Wagyu rib in the pan and sear for about 2-3 minutes on each side to create a golden crust. This sear helps lock in the marbled richness unique to Wagyu.

Step 2: Roast with Butter

Transfer the seared Wagyu to a baking tray, placing a few generous knobs of butter on top. The butter will melt into the Wagyu as it roasts, adding richness and enhancing the flavours of the garlic and rosemary. Place the tray in the preheated oven and roast for about 10-15 minutes, depending on the thickness of your cut and your preferred doneness. Wagyu’s delicate marbling shines best at medium-rare, so check at around 10 minutes.

Step 3: Rest and Slice

Take the Wagyu out of the oven and let it rest for 5-10 minutes. This resting period allows the juices to settle within the meat, making each slice juicy and tender. After resting, slice the Wagyu rib against the grain and arrange the pieces on a serving platter.

Serve and Enjoy

Present your beautifully cooked Wagyu alongside roasted vegetables or a crisp green salad. Drizzle any remaining pan juices over the slices for extra flavour. With hints of rosemary, garlic, and melted butter infusing every bite, this Wagyu rib is ready to be savoured for its rich, luxurious taste.

Enjoy every bite of this unforgettable dining experience!
